Snicker’s Snackers – a new twist on snacking

Are you running of healthy things to snack on in your Multiple Sclerosis diet makeover? Getting closer to that bag of chips or have you already fallen in?

Don’t fret! Here is one of my favourite snacks that keeps my sweet tooth happy and lots of good fats and protein.

Make a big batch and keep them in the freezer 😋

Ingredients:

  • ½ cup sunflower seeds and/or pumpkin seeds
  • ½ cup sesame seeds or hemp hearts
  • ¼ cup honey, or swerve, molasses etc. (optional)
  • ½ cup nut butter (almond works well) or sunflower butter
  • ½ cup carob or cocoa powder (optional
  • ¼ cup ground flax
  • ¼ cup ground chia
  • ¼ cup unsweetened coconut

    Modifications…

    Add one or two tablespoons (or more) of coconut oil (the brain preferentially burns fat!) And adjust the other ingredients, like the ground chia/flax, to keep a thicker consistency.

    Ultimately you can combine any amount of these ingredients to achieve the consistency you desire.

    Instructions:

    Combine ingredients in bowl or food processor. Blend until well mixed.

    If you are making these for small children grind the seeds first in a coffee grinder

         Form into small balls.

         Option: roll each ball into carob or coconut

If the mixture is too soft, refrigerate for half an hour before rolling in a ball OR just drop from a teaspoon onto a greased cookie sheet.

Keep the Snickers Snackers in a container in the freezer and enjoy one or two throughout the day!
